Chocolate Chip Cookies

2 ¼ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

2 sticks unsalted butter at room temperature

½ cup granulated sugar

1 cup brown sugar, firmly packed

2 eggs

    1 teaspoon vanilla extract

    3 cups semi-sweet chocolate chips

    1. Preheat oven to 375°F.
    2. In a large bowl combine flour, baking soda and salt. Whisk to combine. 3. In another bowl cream together butter, sugar and brown sugar with a mixer until very creamy. This usually takes about 2 minutes.
    3. Beat the eggs in a separate bowl along with the vanilla, then add to the butter sugar mixture and mix just until combined.
    4. Add the dry ingredients into the bowl with the wet ingredients and mix until combined.
    5. Add the chocolate chips and mix until combined.
    6. Use a 2 teaspoon cookie scoop and scoop the dough onto an ungreased cookie sheet about 2 inches apart.
    7. Bake 10-12 minutes until the cookies are golden brown and set.
    8. Allow to cool for 10 minutes on the pan, then transfer to a wire rack and allow to cool completely.
    9. Store in an airtight container on the countertop.

**You can also use the cookie scoop to form the cookies, then drop the formed dough into a resealable plastic bag and freeze them. That way you can bake just a few at a time. I always write the oven temperature and baking time on the outside of the bag. It will keep in the freezer for approximately 2 months.
