I first had this in a restaurant in Chattanooga, Tennessee a while back and I knew immediately that I wanted to be able to make this one at home!
Avocado Toast
1 ripe avocado juice of one lemon 1 teaspoon olive oil 1⁄4 teaspoon sea salt
1. Slice avocado in half, running knife around the center. Separate the two halves. Remove pit by making a chopping motion with a sharp knife across the center of the pit. This will embed the knife into the pit. Then turn the knife handle to release the pit from the avocado.
2. Scoop out the flesh of the avocado into a small bowl.
3. Add lemon juice, olive oil and sea salt and mash with a fork until the spread is of desired consistency.
4. Serve on toast.
**Extra spread can be stored in the refrigerator for several days if you cover the bowl with plastic wrap. The wrap must be actually touching the top of the spread in order to block out air and keep the spread from turning brown.
