I talked to my daughter this week and she was making this one for the freezer. She said: “We ate the last one that was in there last night, so we need some more.” So, apparently this one has become a favorite in a second gereration household. It’s easy to make, holds together beautifully and freezes well, but you probably guessed that part already. I saw some ground beef on sale, which is a rarity these days, so I think I will go and do likewise.

(makes 4-6 servings)

1 pound ground beef

1 egg

1 tablespoon dried minced onion

1 clove garlic

½ tsp. salt

½ cup oatmeal

1 tablespoon ketchup

1 teaspoon mustard

Glaze

¼ cup brown sugar

2 tablespoons ketchup

1 teaspoon yellow mustard

1 teaspoon Worcestershire sauce

1. Preheat oven to 350°F.

2. Pour oatmeal into a blender and blend until it’s ground to a fine powder.

3. Mix all meatloaf ingredients together in a bowl until thoroughly blended

and place in a loaf pan.

4. Make a small impression longways down the center of the meatloaf to

hold the glaze.

5. Mix glaze ingredients together and pour on top of the meatloaf.

6. Bake for 60 minutes or until meat thermometer reads 160°F.

…and here’s the Ground Turkey version from earlier this year.
