Well the ground hog has predicted six more weeks of winter weather for us, so we need something warm and hearty to keep us going. How about some chili? Quick and easy to make. Great for feeding a crowd and the list of chili toppings is endless; cheese, jalapeños, if you are so inclined, a little lime juice, tortilla chips…or Fritos are my favorite, sour cream and these are just for starters.
Everyone’s Favorite Chili
(makes 8-10 servings)
1 pound ground beef
1 14.5 ounce can tomato sauce
1 14.5 ounce can kidney beans (with liquid)
1 14.5 ounce can pinto beans (with liquid)
1 small onion chopped
1 stalk celery chopped
2 medium tomatoes, chopped OR 1 15-ounce can diced tomatoes 1 teaspoon ground cumin
1 tablespoons chili powder 1⁄2 teaspoon black pepper 2 teaspoons salt
1 cup water
If you like your chili spicy; add 1⁄4 cup green chiles.
1. Brown the ground beef in a skillet over medium heat; drain off the fat. 2. Using a fork, crumble the cooked beef into pea-size pieces.
3. In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat. Cook, stirring every 15 minutes, for 2 to 3 hours.
