This is another recipe that doesn’t hang around long enough at our house to get its picture taken!

3 ¼ cups all-purpose flour 

1 1/2 cups sugar 

¾ cup unsalted butter (1 ½ sticks) 

2 eggs

2 ½ teaspoons baking powder 

2 tablespoons milk 

1 teaspoon vanilla extract 

½ teaspoon salt 

  1. Combine all ingredients in a large mixing bowl. Beat with a mixer at medium speed until ingredients are well combined. Be sure to scrape down the sides of the bowl with a spatula as you mix the ingredients.
  2. Shape the dough into a ball. Cover with plastic wrap and refrigerate for 2-3 hours before baking.
  3. Preheat oven to 450°F and grease cookie sheet.
  4. Remove chilled dough from refrigerator and roll out on a floured surface with a floured rolling pin until the dough is about ¼ inch thick and use floured cookie cutters to cut out the desired shapes and place on greased cookie sheet to bake. OR, you can simply use a small cookie scoop or a tablespoon to portion the dough in equal size pieces and place on the greased cookie sheet.
  5. Sprinkle with your choice toppings (Sugar, chopped nuts, shredded coconut or nothing at all). Bake 8 minutes or until very lightly browned.

Then use a spatula to remove the cookies to a cooling rack.
