This is another recipe that doesn’t hang around long enough at our house to get its picture taken!
3 ¼ cups all-purpose flour
1 1/2 cups sugar
¾ cup unsalted butter (1 ½ sticks)
2 eggs
2 ½ teaspoons baking powder
2 tablespoons milk
1 teaspoon vanilla extract
½ teaspoon salt
- Combine all ingredients in a large mixing bowl. Beat with a mixer at medium speed until ingredients are well combined. Be sure to scrape down the sides of the bowl with a spatula as you mix the ingredients.
- Shape the dough into a ball. Cover with plastic wrap and refrigerate for 2-3 hours before baking.
- Preheat oven to 450°F and grease cookie sheet.
- Remove chilled dough from refrigerator and roll out on a floured surface with a floured rolling pin until the dough is about ¼ inch thick and use floured cookie cutters to cut out the desired shapes and place on greased cookie sheet to bake. OR, you can simply use a small cookie scoop or a tablespoon to portion the dough in equal size pieces and place on the greased cookie sheet.
- Sprinkle with your choice toppings (Sugar, chopped nuts, shredded coconut or nothing at all). Bake 8 minutes or until very lightly browned.
Then use a spatula to remove the cookies to a cooling rack.
