Just in time for your Thanksgiving table…or even on a normal weeknight, mashed potatoes from scratch are a can-do addition to your menu.

Mashed Potatoes (makes 4-5 servings)

4 medium potatoes  

3 tablespoons unsalted butter 

½ cup milk 

½ teaspoon salt 

  1. Peel potatoes and cut into bite-sized pieces. Rinse and drain in a colander, then put into saucepan with just enough water to cover the potatoes.
  2. Heat water to boiling. Allow to boil for 15 minutes or until potatoes are fork-tender.
  3. Drain water, then add butter, milk and salt.
  4. Mash all ingredients with a potato masher, or use a mixer to mash to desired consistency. Serve immediately.
